500g sugar.
150 mL full cream milk.
150 grams butter.
150 grams chocolate (yes, chocolate)
60 grams honey.
Place all ingredients in a large saucepan. Stir over a low heat until sugar has dissolved.
Bring to the boil and boil to 240 degrees F. (115 Celsius) Stirring often.
You need a sugar thermometer for this. Try Google.
Remove from heat, stand pot on a cool surface for 10 mins, then beat like crazy until the mixture is thick, creamy and beginning to “grain.” Pour into a greased tin. Place in frig when cool and enjoy!!

Very easy and quick to make and keeps well. A real hit in our family!
Ingredients

  • 3 cups self raising flour
  • 1 packet dried onion soup mix
  • 2 cups plain natural yoghurt (or buttermilk)
  • 1 tablespoon milk to brush top

Method

Grease a 14x21 cm loaf pan. Mix the self raising flour and onion soup mix together. Add the yoghurt and mix to a soft sticky dough. Place in loaf tin and brush the top with milk. Bake for an hour at 180°C.

12 biggish / average sized tomatoes – blanch, peel and roughly chop
6 biggish / average sized onions – peel and slice finely
2 cups white sugar
2 cups malt vinegar
1 tablespoon mustard powder
1 tablespoon curry powder
2 tablespoons plain salt (not iodised)

Put all ingredients into a large pot, bring to boil then simmer reasonably briskly for an hour. Stir occasionally so it does not stick to the pot.
Bring back to the boil and thicken with 2 – 3 tablespoons of cornflour mixed to a paste with water.
Pour into sterilised jars while very hot. Fill jars to the brim.
Put lid on immediately and screw tightly.
After 10 or so minutes the lid will “pop” there will be a slight indentation in the lid indicating that the jar is sealed.
